Grilled Corn, Tomato, Spinach and Arugula Salad

Ingredients
- 1 Cup of Spinach
- 1 Cup of Arugula
- 1 Cup of Sweet Kernel Corn
- 1 Cup of Cherry Tomatoes (halved)
- 4 Slices of Bacon (cooked and diced)
- Goat Cheese
- ½ tsp of Chili powder
- 1 tbsp of Butter
- Black Pepper
- Salt
- Dressing:
- ½ a Cup of Olive Oil
- 1 tbsp of Dijon Mustard
- ¼ cup of Lemon Juice
- Black Pepper
- Salt
Directions
- Step 1 Place pan on medium low heat, add your butter and sweet kernel corn. Pan Roast for 8-10 mins or until the corn starts to brown. Stir corn occasionally. Before removing corn, stir in chili powder and cook for an extra 1-2 mins. Remove and set aside.
- Step 2 In a salad bowl, mix all salad ingredients except salt and pepper, cover and place in the refrigerator.
- Step 3 In a small bowl, mix all dressing ingredients, cover and place into the refrigerator until ready to serve.
- Step 4 Mix dressing with the salad, garnish with goat cheese, salt and pepper and serve immediately. Add salt and pepper according to preference.
- Step 5 PS: You can add any other choice of protein
