Meanwhile, those who cook daily may resort to simple but hearty meals. There is also the option to fix a side dish, but you can only fully enjoy that when it perfectly complements your main meal. According to news reports, 24% of people in Canada eat mostly salads as a side dish, but you can try something different. Whether you’re preparing for a special occasion or want a memorable family meal, here are some tips to consider to pair your side dish with your main meal perfectly.

Consider the main dish’s flavours and textures.

As the saying goes, variety is the spice of life. And this can also apply to your side dishes. A plate with various textures is visually appealing and can easily whet your appetite. It also makes it more fun to eat and would make you want to try your hands at preparing more side dishes with contrasting flavours and textures. For example, if you are serving a creamy pasta dish, pair it with a crisp and refreshing salad to balance out the richness of the main course. Again, if you are serving a hearty stew, try combining it with soft and buttery bread to complement the sauce’s flavours. While it may look too much to cook for dinner, you will be happy to know that contrasting textures and flavours are not too hard to create. You can quickly get the ingredients for these tasty dishes in the grocery store.

Matching the cultural origins of a main dish with a side dish is a great way to create a cohesive and authentic meal. One way to do this is to research the traditional side dishes commonly served with the main dish in the culture of origin. For example, if you are serving a Chinese dish, pair it with a side dish such as steamed rice, stir-fried vegetables, or dumplings.

Another way to match the cultural origins of a main dish with a side dish is to use ingredients, and cooking techniques commonly found there. For example, if you are serving a Mediterranean dish, use ingredients such as olives, feta cheese, and herbs like oregano and thyme in your side dish. Additionally, you could prepare your side dish using cooking methods like grilling, roasting, and braising, which are popular in Mediterranean cuisine.

Plan or alter the cooking methods

This step is especially crucial if you don’t have much time. Planning your pairings ahead of time can significantly reduce the time you spend in the kitchen. It will also make it easier for you to multitask and maximize your kitchen equipment. For instance, while you use your stove for the main course, you can use the oven for your side dish. Suppose you want to try something quick and different using this technique. This is how I spent Shrove Tuesday, burying my face in this plate of the fluffiest, richest pancakes you’ll ever have. I am a lover of pancakes and I’ll use just about anything and turn it into a pancake. Have you tried plantain pancakes? I went all-in with this one.. oh yeah all in!

My goal was to use all leftovers I had in my fridge to make way for new groceries, and this was the result, call me the leftover queen👑 

Let me attempt to describe how good this is. Imagine the fluffiest pancakes you can think of, filled with scallions (green onions) for that savory touch, now layered with queso fresco cheese, pancetta & slaw. Once you bite into these rich pancakes, you get a hit of that ooey-gooey mild slightly tangy cheese, then you are hit with a slight salty meaty feeling from the pancetta, and finally a slight crunch from the slaw and scallions. My oh my too good! 😋🤤 as if that’s not enough, I topped it with my Chilli Sauce for a little kick.

The taste reminds me of a cross between Korean, Nigerian & Buttermilk Pancakes, although I did not use buttermilk in it. All I had was table cream 18% in my fridge; I was a bit skeptical at first because I have never heard or seen cream used in a pancake batter but let me tell you, the richness and thickness of this pancake were as a result of the cream.

Savory Pancakes, Queso Fresco, Pancetta & Slaw

Ingredients
  • 2 Cups of Flour
  • 1 tsp Baking powder
  • 1 tsp of Baking Soda
  • 3 tbsp of Sugar
  • 1/2 tsp of Salt
  • 1 and 1/2 Cup of Table Cream (18%)
  • 3 Stalks of Scallion (chopped)
  • 1/3 Cup of Pancetta
  • 1/2 Cup of Queso Fresco
  • 1 Cup of Slaw Mix
  • Unsalted Butter or Vegetable Oil for frying
  • PS: You can replace table cream with regular milk or buttermilk
Directions
  • Step 1 Prepare pancetta by cooking in the pan with 1 tbsp of oil until crisp and set aside. Grate cheese and set aside.
  • Step 2 Preheat oven to 185 F and have a baking sheet or heatproof platter ready to keep cooked pancakes warm in the oven. In a bowl mix flour, baking powder and soda, salt, sugar, eggs and cream. Mix until all ingredients have been incorporated together. Do not over-mix as a little lump is good in the batter. Add chopped scallions, mix together and set aside.
  • Step 3 Heat a skillet (nonstick or cast-iron) or griddle over medium. Add your butter or oil to the hot pan.
  • Step 4 For each pancake, use 1/4 cup and scope batter onto the skillet. Cook until the surface of pancake has some bubbles or for 45-50 secs. Top with cheese, pancetta and slaw, use a tbsp of batter to cover fillings to avoid burning. Flip carefully with a thin spatula, and cook until browned on the underside, 1 to 2 minutes.
  • Step 5 Transfer to a baking sheet or platter, cover loosely with aluminum foil, and keep warm in the oven. Continue with more oil and remaining batter (You’ll have 8-9 pancakes).
  • Step 6 Serve warm, with desired toppings or chilli sauce as I did.

Vegetable Stew- Jute Leaves/Ewedu/Molokhai Leaves

Ingredients
  • Jute Leaves- 3 packs ( if you are not using spinach use 4 packs. You can chop leaves if you want).
  • Chopped Spinach- A handful (optional)
  • 4 Boneless Skinless Chicken thighs
  • 6-7 Pieces of Prawns (optional)
  • 5 Red Sheppard Pepper
  • 3 Fresh Tomatoes
  • 2 Scotch Bonnet Pepper (if u want less heat use 1 or take out the seeds)
  • 3 Garlic Cloves
  • 1 Sweet Onion- (extra ¼ cup diced)
  • 1 Carrot
  • 5-6 tbsp of Vegetable oil
  • 500-600ml of Water
  • 2 tbsp of All Purpose Seasoning
  • 2 tbsp of Bouillon Powder (If using cubes- 2)
  • 1 tbsp of Paprika
  • 3 Bay Leaves
  • 2 tsp of Kosher Salt
  • Fresh Chili Pepper (For Garnish)
Directions
  • Step 1 Blend tomatoes, red sheppard peppers, scotch bonnet pepper and half of the large onion. Put pepper mixture in a pot and boil until water dries out and it becomes a thick paste. Set aside.
  • Step 2 Season chicken thighs thoroughly with all purpose seasoning on both sides.
  • Step 3 Heat 2 tbsp of oil in a clean pot on medium heat and brown chicken on both sides. When chicken has been browned add your roughly chopped carrots, chopped onion (the other half) and crushed garlic cloves. Cook until vegetables become a bit soft and slightly browned. Add your water, bay leaves, salt and 1 tbsp of bouillon powder. Stir and cover on medium heat, cook for 10-15 minutes. Remove chicken and set aside, reserve stock.
  • Step 4 In a clean pot, add 3-4 tbsp of oil to pot on medium heat. Add your diced onions and cook until soft. Add your cooked pepper mixture and fry for 5 mins, then add your paprika, bouillon, salt and fry for an additional 5-8 minutes. Add your stock, stir properly, cover and leave to cook on medium heat for 10-15 minutes or until oil begins to rise/float to the top. Taste for seasoning and adjust with salt if needed.
  • Step 5 Add your jute leaves and chopped spinach. Stir properly and leave to cook for about 5 minutes. Add your prawns and sliced chicken thighs and simmer for 5 minutes.
  • Step 6 Your stew is ready!!
